Country Boy Grilled Chicken Chopped BBQ Salad Recipe

2- 12 oz bags of Mixed Salad Greens

1 ½ pounds of Country Boy Grilled Chicken (see below)

½ cup of canned black beans, drained and rinsed

½ cup of corn salsa

4 ounces of shredded cheddar cheese

1 tomato diced

1 cup of tortilla strips

Country Boy Ranch Dressing (see below)


Country Boy Ranch Dressing

½ cup of your favorite ranch dressing

¼ cup of country boy marinade

Measure your ranch dressing and country boy marinade and place into a small bowl. Whisk ingredients until well combined. Cover and place in the fridge for as long as possible to allow the flavors to meld.

Country Boy Grilled Chicken

1 cup of Country Boy Marinade

1 ½ pounds of Boneless chicken breast

1 Tablespoon of King of Foods Poultry Seasoning


"Country Boy" Grilled Chicken Chopped Salad Ingredients

  1. Measure 1 cup of country boy marinade into a large container with a lid or gallon plastic bag. Place your chicken breasts into the container with the marinade and turn to coat. Marinate overnight.

  2. When you are ready to cook the chicken remove the chicken from the marinade and shake off any excess. Discard the marinade.

  3. Evenly sprinkle the poultry seasoning onto the front and back of the chicken breasts.

  4. Preheat your grill and prepare for direct cooking on medium heat (350°-450°F).

  5. Grill your chicken breasts until they reach an internal temperature of 160°F at the thickest part of the breast, Turning chicken once about halfway through. Depending on the thickness of your chicken breast cook time may vary from 8-13 minutes.


Assemble the salad:

Assemble the salad by layering the lettuce in a large bowl. Top with chicken, tomato, corn salsa, beans, cheese. Pour desired amount of dressing on top of salad and gently toss to combine.
